Eat good – Live well – Enjoy life !
The west of Ireland possess a serene yet melancholy beauty that can engross every sense of ones self. A journey across this country’s midland takes you from the rolling green fields of dairy cows and thoroughbreds, through knobby fields of fairy mounds and sheep, across the land of loughs and peat bogs, to a barren yet beautiful land of rock outcroppings and endless costal inlets…. All in a span of less than 200 miles.
My revisit of Ireland was greeted by Irish friends welcoming me “home”, pints and sun shine. Within a few days i had the unbelievable treat of welcoming 2 of my best Missouri friends and introducing them to one of my best Irish friends. At 6am we were picking them up from the Dublin airport and by 8am we were climbing the site of Loughcrew and sharing their first pint of Guinness (from cans carried up in our rucksacks) atop the ancient cairn site with a mystical fog covering the ridge top.
Only 2 days into this week long roadtrip of inspiration, and already my photo files are bulging with beautiful images and memories. The friendly Irish people always willing to share a few words, give directions or assist with a serendipitous moment. As of today, we have driven from Slane, through Kells, to Loughcrew, to Fore, back roads across to Galway, then endless exploring along the coastal road and peninsulas north through the remote Connemara, stopping tonight in a tiny but wonderful spot on called Mannin, where we are being hosted by a lovely ex-french-pat couchsurfing host in her idyllic stone cottage on the bay. Tomorrow and each day of this adventure will bring just as beautiful as is diverse, sites and wonders of Ireland. To tag along also go like the Rucksack Foodie FaceBook Page….HERE
