Tipsy Apple Tart

This Tipsy Apple Tart recipe is a simple, delicious and a perfect way to use up excess apples if you’ve overstocked your pantry.

This is a great last-minute, need a dessert, don’t want to make a big mess, recipe. Something I just throw together with not much detail in the direction, that’s kind of the fun in it for me as a cook. And I’ll be honest I’m not a great pastry maker (yet) so I have no shame in admitting to using store-bought crust, known as shortcrust in Scotland. We are currently also rationing the use of the “good butter” in our house due to the corona isolation, so I used butter spread instead which works equally as well.

I used Bowmore Whisky for my latest bake. Bowmore is an Islay region whisky which means it has some peaty overtones to it. I tend to use a more mellow whisky like an Achentoshan or in an effort to conserve the “good stuff” I really prefer to use a traditional Irish Whiskey like Jamiesons. Most classic Irish Whiskeys are triple distilled, smoother and sweeter. And trust me on using the orange juice AND the whisky AND the vanilla, the combination with the hint of spice is reminiscent of Christmas pudding and warm winter fires. Tipsy Apple Tart will be your new go-to favorite sweet treat in the house!

Tipsy Apple Tart

Ingredients

  • 3-4 Apples thin sliced
  • 3 tbsp Whisky *optional but delicious
  • 2 tbsp vanilla
  • 1-2 tbsp orange juice *if not using whisky use a little extra in place of
  • 1/2 cup brown sugar packed
  • 1 1/2 tbsp cinnamon
  • 1/4 tsp nutmeg
  • 4-6 tbsp butter softened
  • 1 pastry crust I used a square sheet, trimmed it and pieced it together to fit my circular pan.

Instructions

  • Preheat oven 400f/200c.
  • Slice apples into a bowl and toss with whisky, vanilla, and orange juice to soak up flavor and keep from browning.

  • Mix brown sugar with cinnamon and nutmeg.
  • Roll out and press crust into your chosen flat pan shape.
  • Spread butter onto crust, leaving about an inch from the edge.
  • Sprinkle on the sugar & spice mixture, saving about 1-2 tbls for later.

  • Start to lay out apple slices onto the prepared crust. It doesn't have to be perfect looking because it will be perfect tasting!
  • Sprinkle the remaining sugar & spice on top of the apples, and fold over the little edge in towards the apples. see picture
  • Bake in oven for 20 minutes.
  • Best served warm, topped with double cream or ice cream.

Notes

I have made this recipe off-the-cuff for years with various tweeks. I have had tasty success with just combining the butter, sugar, whisky, vanilla, orange juice and spices into a sauce pan and melting together for just a minute or two, then pouring over the apples already fanned out on to the crust. Equally delicious results!
